Bean Flour Blend

I use this blend almost exclusively for sandwich bread.

3 cups chickpea or garfava flour
1 cup sorghum flour
1 cup potato starch
1 cup tapioca starch

Sift all ingredients together until well-blended. Store in the refrigerator or freezer.
