GFCF Applesauce Spice Bread

This is one of my favorite quick breads. It's so easy to throw together and it comes out great every time.

1 cup unsweetened applesauce
3/4 cup packed brown sugar
1/4 cup canola oil
1 egg
1 tsp. vanilla
1 1/2 cups GF flour blend
1 tsp. xanthan gum
3/4 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 cup walnut meal

Preheat oven to 350 degrees. Coat a loaf pan (8 inch) with cooking spray, set aside.

In a medium bowl, sift together the GF flour blend, xanthan gum, baking soda, cinnamon, baking powder, salt and nutmeg. Set aside.

In a large bowl, beat applesauce, brown sugar and oil until well blended. Add egg and vanilla, beat well. Add the dry ingredients to the wet ingredients and mix well. Fold in the walnut meal. Pour batter into the prepared loaf pan and bake 45 minutes or until a toothpick inserted in the center comes out clean.

How much Xanthan? I was surprised to see no xanthan ingredient and then I saw the directions said to add xanthan.

Sorry about that, Carolyn. I usually add 1 tsp. xanthan gum to quickbread and muffin recipes, it's so ingrained I forgot to write it down. It's fixed now, thanks for bringing it to my attention.

Sorry to bother---which of the GF flour blends are you using? Rice or Sorghum? I am not experienced enough to make a guess successfully! Thanks for your time!

Either one is fine! It's a matter of taste, whichever one tastes better to you.

Can you substitute ground almonds for the walnut meal? I'm still fairly new to this... but have most of the ingredients. Have 3 kids.. 2 with asd (autism) would love to whip it up for a fun snack!!! thx.

Hi Glenda, I think ground almonds would work well. You can also omit the nuts if needed.

The recipe is very similar. Don't frost them, they'll be muffins.
